Salted GOLDEN SYRUP boiled ORANGE CAKE

2 oranges

1 cup (220g) caster sugar

1/4 cup golden syrup, plus extra for drizzling

1/4 tsp bicarbonate of soda powder

100g butter, chopped

6 eggs 

2 cups (200g) almond meal 

1/2 cup (50g) rice flour 

1 1/2 tsp baking powder 

1 heaped teaspoon sea salt flakes

Cream to serve.

  1. Grease and line a 23cm spring form pan with baking paper and preheat oven to 170C fan forced.

  2. Place oranges in a small saucepan and cover with water. Place over high heat and bring to the boil. Reduce heat to medium low, cover and cook for 2 hours, topping with water every 20 minutes, or until softened and cooked through. Strain.

  3. Place oranges, sugar, golden syrup and bicarb in a food proccessor and whiz until smooth.

  4. Add butter bit by bit until combined.

  5. Add eggs one by one until incorporated.

  6. Add almond meal, rice flour and baking powder and pulse to combine. Transfer to prepared pan and drizzle with golden syrup. scatter with salt and bake for 45-50 minutes or until cooked through.

  7. Stand to cool, re drizzle once more and serve with cream.
